Lazy Lasagna

One of my goals with Glass Wrappings is be true to our tagline, "Celebrations Simplified." To me, part of that is sharing simple recipes - or if they aren't simple, they have a huge yield or in some way are worth the trouble!

I think I have one of the all-time great lasagna recipes. I found it in cookbook from Pasta & Company, an incredible gourmet take-out shop in Seattle. It is wonderful, but complicated (the bechamel sauce!), so that I often take parts of two days to prepare it.

But, a couple of months ago I came upon this "Lazy Lasagna" recipe in a TownePost.com magazine up in Lake Maxinkuckee. To appease my husband, Paul, I added some ground beef, but it's still super easy to make and tastes great!

Total Time: It takes about 25 minutes to prepare, and bakes for 40 minutes. 

Yield: 8 servings

Ingredients:

1 pound ground beef

1 jar pasta sauce (I use Rao's)

1 package cheese ravioli (I use Buitoni's)

1-1/2 cups shredded mozzarella cheese (I use Tillamook)

Fresh basil, if available (Thank you Anne Marie!)

Directions:

1. In a large skillet, cook and crumble the beef over medium heat until it is no longer pink, 5-7 minutes. Drain off the fat.

2. In a prepared 9" x 13" baking dish (2.5 quarts), layer a third of the pasta sauce, half of the ravioli, half of the beef, and 1/2 cup of the mozzarella. Repeat layers.  Top with remaining sauce and mozzarella. 

3. Cover and bake at 400 degrees for 40-45 minutes or until heated through. If desired, sprinkle with chopped basil.
